This unique Grüner Veltliner sparkling wine offers aromas of wet stone, freshly chopped herbs, and cucumber. Its delicate texture is beautifully balanced by crisp natural acidity. Lively notes of white pepper and Granny Smith apple lead to a balanced, long finish.
Production notes
Rava sparkling wines are crafted using time-honored méthode champenoise techniques. The cuvée, or base wine for this sparkler consists of 100% Gruner Veltliner, which was fermented in stainless steel to capture the freshness and minerality. The cuvée, along with a mixture of sugar, yeast and nutrients, was bottled after an extended aging en tirage.
Other notes
This sparkling wine pairs beautifully with herbal dishes of dill, tarragon, mint and parsley; making a perfect match with chimichurri. Also try it with grilled artichokes, smoked salmon, or coconut Thai food.

Black Jack Vineyards is owned and farmed by the Rava family, a third-generation farming family. Ideally situated on a gently sloping hillside of the Santa Lucia range in Monterey County, the vineyard enjoys foggy mornings and warm days followed by late afternoon coastal breezes and chilly nights. These cool temperatures allow grapes to ripen slowly over a prolonged growing season, resulting in expressive, aromatic fruit.
