2021 Chardonnay
Tasting notes
This Chardonnay displays a light golden yellow color. Exquisite aromas of butterscotch, grilled pineapple, and white peach are accented by Tahitian vanilla and creme brulee from the extended aging on the lees. The finish is long and lingering, with a rich and elegant middle.
Production notes
The Chardonnay grapes were hand picked and channeled direct to press. The juice was racked to French oak barrels where it was fermented and aged sur lie for 16 months and went through malo-lactic fermentation. The oak lent complexity to the wine without overshadowing the natural freshness and acidity of the grapes.
Other notes
Serve with aged Gouda or other hard cheeses, and as a counterpoint to soft triple creams. Also pairs nicely with puffed pastry, crab legs, coonut shrimp, grilled scallops, pesto linguine, or fettucine alfredo.

Black Jack Vineyard is owned and farmed by the Rava family, a third-generation farming family. Ideally situated on a gently sloping hillside of the Santa Lucia range in Monterey County, the vineyard enjoys foggy mornings and warm days followed by late afternoon coastal breezes and chilly nights. These cool temperatures allow the grapes to ripen slowly over a prolonged growing season, resulting in expressive, aromatic fruit.
