2025 Chardonnay
Tasting notes
This Chardonnay displays a light golden yellow color. The aromas of honeycomb and banana cream pie are inviting. The mid palate is a softer caramel apple from the extended aging on the lees, but it finishes crisp like a tart pear or unripe pineapple.
Production notes
The Chardonnay grapes were hand picked and channeled direct to press. The juice was racked to neutral French oak barrels where it was fermented and aged sur lie for 10 months, adding a softness to the mid palate. The oak lent complexity, without overshadowing the natural acidity of the grapes
Other notes
Serve with aged Gouda or as a counterpoint to soft triple creams. Also pairs nicely with puffed pastry, crab legs, coconut shrimp, grilled scallops, or pesto linguine.

Black Jack Vineyard is owned and farmed by the Rava family, a third-generation farming family. Ideally situated on a gently sloping hillside of the Santa Lucia range in Monterey County, the vineyard enjoys foggy mornings and warm days followed by late afternoon coastal breezes and chilly nights. These cool temperatures allow the grapes to ripen slowly over a prolonged growing season, resulting in expressive, aromatic fruit.
